Please join us between the hours of 4 to 7pm as we will have some beautiful wines from the West Coast open, Eloaun Pinot Noir, Elouan Chardonnay & Quilt Cabernet Sauvignon Elouan Pinot Noir - The delicate nature of Oregon Pinot Noir requires a soft hand in the cellar. The clusters were 100% destemmed with a few select lots having small amounts of stems added back to the fermenter for phenolic augmentation. The must underwent an extended cold soak, ranging from five days to two weeks, and during fermentation both punch-down and pump-over techniques were utilized. We monitor the separate lots and tailor the extraction methods to the needs of each one. We find this style of reactive winemaking is the best way to coax the optimal terroir qualities from Pinot Noir, truly exemplifying the prime coastal vineyards from where it is sourced. The wine was aged for ten months in a mix of new and seasoned French oak and racked upon completion of malolactic fermentation. Elouan Chardonnay - The 2019 Elouan Chardonnay has an abundant floral aroma of acacia blossoms and rose petals accompanied by citrus and white pear. Pale straw yellow in color, this Chardonnay has bright acidity with very light oak followed by flavors of tropical fruit, lime zest and a touch of nectarine. This wine has a smooth and well-balanced mouth-feel, with a lingering and bright finish. Quilt Cabernet Sauvignon - Deep garnet. aroma, lush aromas of eucalyptus, dark cherry, crushed violet and hints of cocoa nibs and butterscotch. The Palate is bold and unctuous on the palate with dark berries, dried apricot, and notes of cocoa. Beautifully rounded with an elegantly smooth finish accompanied by velvety tannins. |
