The Lahot Adom is produced mostly the Ben-Ayoun vineyard in Elkosh. The grapes are hand-picked and after processing are cold soaked and fermented in a wide tank. The wine matures for about 15 months in oak barrels and it is juicy in moderation, spicy and peppery, with lots of red fruit. The mid palate is tight, and carries a called for reduction and minerality that are characteristic of early harvest and a long stay on the lees.
