Thierry Pillot is part of a young generation of talented winemakers from Chassagne-Montrachet. He’s been running his family Domaine, Paul Pillot since 2004 and making wines under his own label on the side. This is Thierry’s 2021 ‘Les Castets’, a premier cru vineyard situated just above the village of Saint-Aubin, which is planted with both Pinot Noir and Chardonnay. Because of the slightly lower temperatures, Saint-Aubin tends to excel in the warmer vintages such as 2021, producing wines that are crisp, fresh and well-balanced.
